Ingredients for Beef and Broccoli Stems

- 📝 Amount of Ingredients can be adjusted accordingly
- 📝 Prepare or cut the stems to almost similar shape & size to your meat
- 📝 You can also add corn flour slurry at the end to thicken the sauce. (Slurry is made up of 1 tsp corn flour + 4 tbsp water, it can be adjusted to your preferred consistency)
- A. BEEF & MARINATION
- 1 kg stir fry beef – store bought ready cut beef, you can use all of it or halve the amount
- 1 tsp bicarbonate of soda
- 1 pinch white pepper powder
- 2 tbsp corn flour or as needed
- 2 tsp sesame oil
- 2 tsp chicken bouillon
- 1/4 C water
- B. OTHER INGREDIENTS
- 2 broccoli stems – you can use less or more
- 1 big chilli
- 3 cloves garlic
- SEASONINGs
- 1 tbsp oyster sauce
- 1 tsp sugar or to taste
- 1 pinch Salt or to taste
- 1 pinch pepper powder or to taste
- 1 tsp sesame oil (optional)
- 2 tbsp water
Cooking Instructions for making Beef and Broccoli Stems
Prepare beef. Add all ingredients listed used for marinating. Combine and mix well. Leave to rest for 15-20 mins. Prep the rest of the ingredients.
Peel and crush garlic.
Chop or slice the chili.
Using potato peeler, peel the outer layer of the broccoli stems. Cut, dice or slice depending on how your meat is prepared. Keep aside.
To start cooking this dish, first, fry or cook the beef in hot oil for 2 minutes or until it’s just cooked, turning in between frying or cooking. Be careful not to leave it too long in hot oil. Cook in small batches.
Next, heat 3 tbsp of neutral oil to a wok. Add cut broccoli stems and crushed garlic. Cook over medium heat for 1 minute. Add chopped chili. Continue to cook for another 2-3 min.
Add the meat and all ingredients listed under seasonings. Stir well making sure the meat and vegetable are well coated. Taste the meat & diced stems then adjust seasoning accordingly. Serve hot.
