Ingredients for Cauliflower and Chicken Curry:
- 4 small chicken breasts (cut into cubes OR bite size pieces)
- 2 cups cauliflower florets about half a small cauliflower
- 6 Tbsp vegetable or light olive oil
- 1 onion thinly slice
- 2 tsp ginger/garlic paste
- 2 green chillies
- 1 sprig curry leaf
- 1 tsp ground cumin
- 1 tsp ground coriander
- salt to taste
- 1 & 1/2 tsp red chilli powder
- 1 tsp turmeric
- 1/2 tsp red chilli flakes
- 1 tsp garam masala powder
- 2 tomatoes skin removed and pureed OR 1/2 cup chopped tinned tomato
- Fresh coriander leaves for garnish
Cooking Instructions for making Cauliflower and Chicken Curry:
Cut the chicken breasts into cubes. Cut the cauliflower into little florets then washed & drained.
Add oil to the pan and fry the onion until golden brown. Add the chilli and curry leaf and fry for a minute.
Add the ginger/garlic paste and fry for another minute.
Add the turmeric, salt,chilli powder,chilli flakes,cumin & coriander powder stir it then add tomatoes and mix well. Cook for 2 minutes. Add a few drops of water if required and cook until the tomatoes are cooked and the sauce thickens a little.
Add chicken and cook on high heat for about 3-4 minutes, just until everything heats through. Then add cauliflower mix well and continue fry about 2-3 more minutes add 1/3 cup of boiled water bring to the boil turn the heat low cover the pan with lid and cook till cauliflower tender or cook chicken & cauliflower cook well.
Sprinkle garam masala & Garnish with coriander. serve hot with Rice or Roti or naan.
✅Notes:
1. You can add coconut milk instead of the water
2. If you want a hot curry you can add more chilli powder.
3. You can use chicken on the bone if you wish.
