Ingredients for Tomato & Broccoli Pasta
- 1 tablespoon olive oi
- 8 medium sized tomatoes
- 2 medium sized garlic cloves
- 250 g broccoli, stem and/or florets
- 1 spring onion
- 100 g grana padano

Heat the oil: In a large skillet, heat olive oil over medium heat.
Sauté the garlic: Add the minced garlic and cook for about 1 minute, stirring constantly, until fragrant. Be careful not to burn the garlic.
Simmer the tomatoes: Pour in the diced tomatoes with their juices. Bring to a simmer and cook for 5-7 minutes, or until the sauce thickens slightly. Cook with the lid on.

Steam the broccoli: Add the broccoli florets to the pan on top of the tomatoes. Season with a pinch of salt and pepper. Cover the pan and simmer over low heat for 10-12 minutes, or until the broccoli is tender-crisp and bright green.
