Easy Recipe for Beginners Yaki Onigiri with Tuna & Cucumber Filling with a Modern Twist

Ingredients for Yaki Onigiri with Tuna & Cucumber Filling


  1. 1 cup sushi rice or short grain rice
  2. 2 tbsp sushi vinegar
  3. 2 tbsp salted butter or as needed
  4. 1 tbsp maggie seasoning soy sauce or as needed (see pic)

  6. 1 can tuna flakes in oil (180g canned tuna – we used 1/2 of it)
  7. 1 tbsp mayonnaise
  8. 1 pinch salt
  9. 1 pinch white pepper powder
  10. 1/2 tsp sugar or to taste
  11. 1/2 Cucumber – remove the core and seeds. Dice into small cubes

Cooking Instructions for making Yaki Onigiri with Tuna & Cucumber Filling

    Cook Sushi Rice until it’s soft and fluffy.

    Add 2 tablespoons of sushi vinegar Combine and mix well.

    Note: When rice is cooking, prepare the filling.

    Prepare the filling while rice is cooking. Drain oil from tuna can. Transfer tuna flakes to a bowl and add a tbsp of mayonnaise, pinch of salt, sugar & some white pepper powder. Mix well.

    Dice cucumber.

    We used onigiri mould. We have 2 types. The big and the small ones. Big one is for onigiri with filling and the small one is used for plain onigiri.

    When the rice is still warm, fill half of the mould with sushi rice. Make a shallow dent in the center and add small amount of filling. See pic below. Cover the filling with more rice.

    Then Cover the mould with the lid. Press down hard to ensure the rice is tightly packed. Invert the mould and push the back of the mould to pop the shaped rice up.

    Heat up a non-stick skillet or a griddle pan. Add a tsp of butter. Spread the melted butter evenly on the pan. Grill the rice over medium low heat for one or 2 min. Spread a layer of butter on the rice. Then turn or flip the rice & do the same with the opposite side.

    Once butter is fully absorbed, brush all sides with MAGGIE soy sauce seasoning (see pic). We choose this particular seasoning as it adds flavour to the rice. You can find it in any asian grocery. Here in Australia, you can find it in Coles and Woolies.

    Flip the rice and leave it to caramelized for a short time. Do the same with the other sides.

    Continue to grill to your desired doneness. Keep a constant watch as rice can burn easily.

    Serve warm. Enjoy as it is or serve with your preferred sauce.
